Super easy and fast recipe. We were in the mood for Cafe Rio's fire grilled chicken burritos (enchilada style, of course) so we made up our own.
1 package chicken taco mix
3 or more large chicken breasts (about 1 breast per person)
white rice (about 1/2 cup for three 3 people)
1 can beans (black or pinto...we use pinto)
1 can green enchilada sauce
Rub chicken breast in the taco mix and BBQ on the grill. After the chicken is cooked, cut into stripes. Cook rice, heat beans and enchilada sauce. Place chicken, rice, beans and cheese onto a tortilla. Roll tortilla up like a burrito and pour desired amount of enchilada sauce and cheese on top. Enjoy!
