Banana Nut Bread

1/3 cup shortening
1/2 cup sugar
2 eggs
1 3/4 cups sifted all-purpose flour
1 teaspoon baking powder

1/2 teaspoon soda
1/2 teaspoon salt
1 cup mashed ripe banana
1/2 cup chopped walnuts


Cream together shortening and sugar; add eggs and beat well. Sift together dry ingredients; add to creamed mixture alternately with banana, blending well after each addition. Stir in nuts.
Pour into well-greased 9x5x3-inch loaf pan. Bake in moderate oven (350 degrees) 45 to 50 minutes or till done. Remove from pan; cool on rack. Wrap and store overnight.

Cheesy Chicken & Rice Casserole

This is actually an original Campbell's recipe but it's a winner in our home.

1 can (10 3/4 oz) Campbell's Cream of Chicken soup
1 1/3 cup water
3/4 cup
uncooked long-grain white rice
2 cups fresh or frozen vegetables
1/2 tsp onion powder
1/4 tsp ground black pepper
4 skinless, boneless chicken breast halves
1/2 cup shredded Cheddar cheese

  1. Stir the soup, water, rice, vegetables, onion powder and pepper in a 12 x 8" shallow baking dish.
  2. Top with chicken. Sprinkle chicken with additional pepper. Cover.
  3. Bake at 357 for 45 min or until done. Top with cheese. Makes 4 servings.
